Chopped Stease

Our take on the sandwich that’s come to symbolize so much in our community is the Chopped Stease. Stease is about that layered flavor, that BX energy. We have to big up where we’re from, and that means claiming the parts that helped shape us. No disrespect to the OG chopped cheese, but it’s only right we add our own stease. Respectfully.

Black Power Waffle

In our efforts to explore dairy-free ingredients in a base, we love how the mix of cocoa powder and coconut creates a slightly nutty, mild flavor. It’s not too rich or sweet and makes a moist waffle.

Guava Piña

Sweet things don’t have to be full of ingredients you can’t pronounce. Mix fruit puree and a little sugar, and you’ve got a treat worthy of any snack bag.

Deconstructing the apple pie symbolizes a more truthful telling of the American story. And as the saying goes, What’s more American than apple pie? To that we answer, the state-sanctioned oppression of Black people. Food as a venue for artistic expression can make some uncomfortable. But nothing is more discomfiting to us than ignoring the truth of our community’s existence, in plain sight.

On a trip to Cartagena, Colombia, a group of Afro Colombian women welcomed us in the square with a beautiful ceremony featuring traditional dancing and freshly made limonada de coco, a nonalcoholic lime-and-coconut smoothie.

Chili Lime Liberation Pasta

Our Chili Lime Liberation Pasta features ingredients that are generally available on the prison commissary list. In addition to the physical limitations that make incarceration so brutal, nurturing a healthy mental state in spaces where positive outlets are limited, if offered at all, can be impossible. Finding ways to be creative with limited means no matter where you live is something many can relate to, and this dish takes something simple, basic even, and makes it pop.

You’ll find breadfruit everywhere in the Caribbean. We can’t imagine cuisine from this region without this giant nutrient-­rich plant, but it wasn’t always that way.

Diggin in the Curry (D.I.T.C.) with Cauliflower Rice

In homage to the legends, we named this pistachio plantain curry Diggin in the Curry. It reflects a likkle West Indies in your bowl, by way of Bangkok, with Sicilian vibes.

Watermelon Granita

This is an easy dish to make with kids, and children are ever-present in the Ghetto Gastro orbit. As sons, dads, and god-papis, we’ve experienced that some of the best connections with our young people occur when food is being communally prepared.

Purple Haze Pie

Jon’s grandfather, Howard, learned to cook in the military, and he cooked for a living afterward. He was known to make mad trays of mac ’n’ cheese and mad sweet potato pies—the man only knew how to cook in bulk. He added coconut flakes to his sweet potato mixture to give the pie a little crunch, which has become a family tradition.
